Very Easy Chocolate Chip Shortbread Biscuits

 

 

You will need:

 

  • 175g plain flour
  • 175g room temperature butter
  • 75g ground almonds
  • 75g icing sugar
  • 1 tsp vanilla extract
  • 100g-200g dark or milk chocolate chips (depends how chocolatey you want them)

Method:

 

 

    1. In your stand mixer or food processor add your plain flour, butter, ground almonds, icing sugar and vanilla extract. Mix until combined
    2. Then add you chocolate chips and combine
    3. Flour your surface. Roll out your dough about 3mm thick. (If its a warm day you may need to put you dough in the fridge for 15-30 mins so its easier to work with.) Using a cookie cutter of your choice cut out your biscuits and add to a lined baking tray.
    4. Bake on 180 degrees celsius for around 15 mins (this really depends on the size you cut them and the thickness so keep an eye). I say when the edges are a little brown take them out.
    5. Leave to cool and enjoy!
“You can leave out the chocolate if you like. I like to use a very small bear cutter and these work as a perfect snack or even packed lunch addition!”
