Very Easy Chocolate Chip Shortbread Biscuits
You will need:
- 175g plain flour
- 175g room temperature butter
- 75g ground almonds
- 75g icing sugar
- 1 tsp vanilla extract
- 100g-200g dark or milk chocolate chips (depends how chocolatey you want them)
Method:

- In your stand mixer or food processor add your plain flour, butter, ground almonds, icing sugar and vanilla extract. Mix until combined
- Then add you chocolate chips and combine
- Flour your surface. Roll out your dough about 3mm thick. (If its a warm day you may need to put you dough in the fridge for 15-30 mins so its easier to work with.) Using a cookie cutter of your choice cut out your biscuits and add to a lined baking tray.
- Bake on 180 degrees celsius for around 15 mins (this really depends on the size you cut them and the thickness so keep an eye). I say when the edges are a little brown take them out.
- Leave to cool and enjoy!
