1 Sauté Pan
1 Potato peeler
1 tin opener
Ingredients:
2tins cooked corned beef 340g
4-5lge/medmedium potatoes
1med/lgeonion
1tintomatoes
1tbspbutter
salt and pepper to taste
Instructions:
Dice the potatoes into cubes and boil in salted water until just tender. Drain and set aside
Dice the onion and sauté in the butter
Cube your corned beef and add to the softened onions and mix together. The fat in the corned beef will melt and the corned beef will cook down.
Add the tomatoes, but not the juice
Add the cooked potatoes
All the ingredients are cooked so it just needs a gentle simmer for 4-5 mins. If you think it looks dry then add some of your tomato juice
Add Salt and pepper to taste
Tips / Notes
If you prefer your hash on the chunkier side, cut your potatoes into larger pieces and boil them until just al dente to prevent them from breaking down too much when mixed with the corned beef.Be cautious with the salt, as corned beef is naturally salty and your potatoes have also been cooked in salted waterYou can serve the hash with carrots, green beans, broccoli, or simply enjoy it on its own.I Hope you enjoy the recipe, let me know if you give it a try and how it turns out!
