Very Easy Banana & Chocolate Muffins

I make these one bowl banana and chocolate muffins whenever I want something quick, easy, and delicious. They're soft, rich, and so good, no one ever guesses how little effort they take!
Makes: 6 Muffins
Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Equipment:

  • 1 Stand Mixer
  • 1 Large bowl
  • 1 Muffin tin
  • 6 Tulip Muffin Cups

Ingredients:  

  • 100 g Softened butter
  • 175 g castor sugar
  • 2 med eggs
  • 1 tsp baking powder
  • 2 tbsp milk
  • 200 g dark chocolate

Instructions: 

  • Pre heat your oven to 180 degrees Celsius
  • Add all the ingredients to your stand mixer, except the chocolate, and mix until well combined
  • Add your chocolate and mix
  • Distribute the mixture evenly between 6 tulip muffin cups
  • Bake for 25 minutes or until golden brown
  • Leave to cool

Tips / Notes

Don’t worry if you haven’t got a stand mixer, just pop all the ingredients into a large bowl and give them a good mix with a wooden spoon or hand whisk.
When buying your chocolate, you can go for chunks, chips, or break up a chocolate bar, whatever you have on hand. Not a lover of dark chocolate? No problem, milk chocolate works just as well!
If you don’t have tulip muffin cases, standard ones work just fine, just make sure to adjust the baking time if they are smaller. You can also make your own tulip ones with baking parchment.
