Chocolate chip shortbread is incredibly easy to bake, just a few basic ingredients, no fancy equipment, and you’ll have delicious, buttery treats in no time!

Kitchen Scales

Instructions:
Pre heat your oven to 180 degrees celsius and line your baking tray
In your stand mixer add the plain flour, butter, ground almonds, icing sugar and vanilla extract. Mix until combined BUT do not over mix
Stir in your choc chips
Flour your surface then roll the dough to around 3mm thick
Using a cookie cutter of your choice cut out your shortbread and place on the pre lined baking tray
Bake for around 15 minutes, or until the edges start to brown. Bake time depends on the size and thickness of your shortbread.
Tips / Notes
If you're not a chocolate lover, feel free to leave it out! I also love using small cookie cutters, they're perfect for snacks or popping into packed lunch boxes.
