In a large bowl, combine the flour, baking soda, ginger, and cinnamon
Add the butter and rub it into the flour with your fingertips until it looks like breadcrumbs
Stir in the sugar
Add the egg and golden syrup, then mix until a dough forms
Lightly flour a surface and roll out the dough to about 5mm thick
Cut into shapes using cookie cutters
Preheat the oven to 180°C (350°F)
Place the shapes on a lined baking tray and bake for 10–12 minutes until golden
Let the gingerbread cool on a wire rack before decorating with icing and sprinkles!
