Tips / Notes
When preparing leeks, be sure to wash between the layers, as grit often hides between the rings. To change up your soup, stir in 1–2 tablespoons of cream for added richness, or swap the vegetable stock for chicken stock for a deeper flavour. Fresh chives or parsley make a beautiful garnish, and if you're feeling adventurous, add a handful of homemade croutons, or just use your favourite shop-bought ones for ease!I hope you enjoy the recipe - let me know if you give it a try and how it turns out!
