Making oat cookies is so simple, even I can do it, so trust me, if I can make them, you definitely can too!

ice cream scoop
Reusable baking parchment
Baking Tray

Ingredients:
125gUnsalted butter
125gporridge oats
150gplain flour
125gcastor sugar
100-200gdark chocolate
1tspvanilla extract
1/2tspbaking powder
2eggs
Instructions:
Pre-heat oven to 180 degrees celsius and line your baking tray
Mix the eggs and oats together
Add your flour, baking powder and chocolate and mix well
Using a 5cm ice cream scoop to portion out the cookie mixture onto the lined baking tray
Bake for around 12 minutes or until slightly golden
Once baked leave to cool for a few minutes then carefully place on your cooling rack
Tips / Notes
If you don't have a baking scoop use a tablespoon. If you prefer your cookies on the larger side just remember to adjust your baking time accordingly. Keep an eye on them and take them out once they start turning a light golden brown.I personally love dark chocolate, but feel free to use milk chocolate or a mix of both. You can go with chocolate chips, chunks, or simply break up your favourite chocolate bar, whatever you have on hand works perfectly.I hope you enjoy the recipe, let me know if you give it a try and how it turns out!
