Prep Time 15 minutes
Cook Time 7 hours

Equipment:

  • SLOW COOKER
  • CHOPPING BOARD
  • SHARP KNIFE
  • Measuring Spoons
  • VEGETABLE PEELER
  • CHOPPING BOARD

Ingredients:

  • 520 G LAMB SHOULDER Cut into chunks
  • 3 medium potatoes Peeled and chopped
  • 2 large carrots Peeled and sliced
  • 1 medium onion Chopped
  • 2 garlic cloves Crushed
  • 400 ml lamb or beef stock
  • 1 tbsp tomatoe puree
  • 1 tsp Worcestershire sauce Optional
  • 1 bay leaf
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions:

  • Heat the olive oil in a frying pan and brown the lamb for 4–5 minutes and add to the slow cooker. This adds flavour but isn't essential.
  • Put the potatoes, carrots, onion and garlic into the slow cooker
  • Mix the stock, tomato purée, Worcestershire sauce and thyme together. Pour into the slow cooker and add the bay leaf.
  • Cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the lamb is tender and the potatoes are soft.
  • If the gravy is too thin, mix 1 tbsp cornflour with 2 tbsp cold water. Stir into the stew and cook on HIGH for another 20–30 minutes.

Tips / Notes

If you fancy a thicker stew, just use 350ml of stock instead of 400ml (or add cornflour to make it even thicker). The slow cooker keeps  moisture in, so you don’t need as much liquid as you think!
If the kids are not a fans of everything mixed together, just pop the lamb, potatoes and carrots separately onto their plate with a little less gravy, (best to do before you thicken the gravy). Saves you making another meal for kids who are not stew lovers!!
I choose to  brown my lamb in a pan before adding it to the slow cooker. Totally optional, but it makes it even more delicious!
My favorite tip, pop it on LOW for 8 hours, get on with your day and let the slow cooker do all the hard work. You’ll come back to lovely tender lamb and a dinner ready to go, super easy!
