Very Easy Leek and Potato Soup

This easy leek and potato soup is warm, comforting, and made with just a few simple ingredients, perfect for a quick homemade meal

Ingredients:  

  • 3 medium leeks
  • 2 med potatoes
  • 1 med onion
  • 1 tbsp butter
  • 1 ltre vegetable stock
  • salt & pepper to taste

Instructions: 

  • Wash and slice the leeks, dice the onion and peel and dice the potatoes,
  • In a large pan, melt the butter over a medium heat. Add the leeks and onion and cook for 5–7 minutes until softened but not browned.
  • Stir in the diced potatoes, then pour in the stock. Bring to a boil, then lower the heat and simmer gently for 20 minutes, until the potatoes are soft
  • Remove from heat and blend using a blender until smooth

Tips / Notes

When preparing leeks, be sure to wash between the layers, as grit often hides between the rings.
To change up your soup, stir in 1–2 tablespoons of cream for added richness, or swap the vegetable stock for chicken stock for a deeper flavour. Fresh chives or parsley make a beautiful garnish, and if you’re feeling adventurous, add a handful of homemade croutons, or just use your favourite shop-bought ones for ease!
