Very Easy Thick Pancakes

This easy thick pancake recipe gives fluffy, tall pancakes with crisp edges and soft middles, perfect for cosy breakfasts when you fancy proper homemade pancakes at home at weekends often.
Makes: 6 pancakes

Ingredients:  

  • 200 g self-raising flour
  • 1.5 teaspoons baking powder
  • 1 tablespoon caster sugar
  • 25 g melted butter
  • 3 eggs
  • 200 mls milk

Instructions: 

  • Mix dry ingredients in a bowl
  • Add all wet ingredients to dry and mix until you have a nice smooth batter
  • transfer into a jug for easy pouring
  • add a knob of butter to your frying pan and melt on a medium heat
  • once the butter is melted add some batter to the pan until you have your desired sized pancake. The pancake is ready to flip when you start to see the bubbles across the pancake.
  • Cook other side until golden brown…this could be as little as a minute.
  • Serve with your chosen toppings and enjoy!
