Very Easy Blueberry and Apple Muffins

One of my favourite easy bakes, these blueberry muffins are light, fluffy and packed with the apples and blueberries I had leftover in my fridge. They couldn't be simpler to make!
Prep Time 10 minutes
Cook Time 20 minutes

Equipment:

  • Stand Mixer
  • Kitchen Scales
  • Muffin tin
  • Muffin Cases

Ingredients:  

  • 225 g Self raising flour
  • 100 g Room temperature butter
  • 175 g Castor sugar
  • 2 Eggs
  • 1 tbsp Milk
  • 2 Apples
  • 1 Handfull of blueberries
  • Light brown sugar (optional)

Instructions: 

  • Throw everything in a mixer and combine
  • Fill cases 2/3 of the way
  • Add a few more apple pieces and blueberries to the top
  • Sprinkle with light brown sugar (optional)
  • Bake at 180°C for 20 minutes or until golden brown
