One of my favourite easy bakes, these blueberry muffins are light, fluffy and packed with the apples and blueberries I had leftover in my fridge. They couldn't be simpler to make!
Prep Time 10 minutesminutes

Equipment:
Stand Mixer
Kitchen Scales
Muffin tin
Muffin Cases
Ingredients:
225gSelf raising flour
100gRoom temperature butter
175gCastor sugar
2Eggs
1tbspMilk
2Apples
1Handfull of blueberries
Light brown sugar (optional)
Instructions:
Throw everything in a mixer and combine
Fill cases 2/3 of the way
Add a few more apple pieces and blueberries to the top
Sprinkle with light brown sugar (optional)
Bake at 180°C for 20 minutes or until golden brown
