
Very Easy Blueberry and Apple Muffins
One of my favourite easy bakes, these blueberry muffins are light, fluffy and packed with the apples and blueberries I had leftover in my fridge. They couldn't be simpler to make!
Prep Time 10 minutes
Cook Time 20 minutes
Equipment:
- Stand Mixer
- Kitchen Scales
- Muffin tin
- Muffin Cases
Ingredients:
- 225 g Self raising flour
- 100 g Room temperature butter
- 175 g Castor sugar
- 2 Eggs
- 1 tbsp Milk
- 2 Apples
- 1 Handfull of blueberries
- Light brown sugar (optional)
Instructions:
- Throw everything in a mixer and combine
- Fill cases 2/3 of the way
- Add a few more apple pieces and blueberries to the top
- Sprinkle with light brown sugar (optional)
- Bake at 180°C for 20 minutes or until golden brown
