
Very Easy Oat Cookies
Making oat cookies is so simple, even I can do it, so trust me, if I can make them, you definitely can too!

Equipment:
- 1 Bowl
- Kitchen Scales
- Set of Measuring Spoons
- ice cream scoop
- Reusable baking parchment
- Baking Tray
- Cooling Rack
- Cookie Jar
Ingredients:
- 125 g Unsalted butter
- 125 g porridge oats
- 150 g plain flour
- 125 g castor sugar
- 100-200 g dark chocolate
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 2 eggs
Instructions:
- Pre-heat oven to 180 degrees celsius and line your baking tray
- Mix the eggs and oats together
- Add your flour, baking powder and chocolate and mix well
- Using a 5cm ice cream scoop to portion out the cookie mixture onto the lined baking tray
- Bake for around 12 minutes or until slightly golden
- Once baked leave to cool for a few minutes then carefully place on your cooling rack
Tips / Notes
If you don’t have a baking scoop use a tablespoon. If you prefer your cookies on the larger side just remember to adjust your baking time accordingly. Keep an eye on them and take them out once they start turning a light golden brown.
I personally love dark chocolate, but feel free to use milk chocolate or a mix of both. You can go with chocolate chips, chunks, or simply break up your favourite chocolate bar, whatever you have on hand works perfectly.
