Very Easy Chocolate Chip Shortbread

Chocolate chip shortbread is incredibly easy to bake, just a few basic ingredients, no fancy equipment, and you’ll have delicious, buttery treats in no time!
Makes: 25 biscuits
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Equipment:

  • Stand Mixer
  • Kitchen Scales
  • Measuring Spoons
  • reusable parchment paper
  • Baking Tray
  • Wire Rack

Instructions: 

  • Pre heat your oven to 180 degrees celsius and line your baking tray
  • In your stand mixer add the plain flour, butter, ground almonds, icing sugar and vanilla extract. Mix until combined BUT do not over mix
  • Stir in your choc chips
  • Flour your surface then roll the dough to around 3mm thick
  • Using a cookie cutter of your choice cut out your shortbread and place on the pre lined baking tray
  • Bake for around 15 minutes, or until the edges start to brown. Bake time depends on the size and thickness of your shortbread.

Tips / Notes

If you’re not a chocolate lover, feel free to leave it out! I also love using small cookie cutters, they’re perfect for snacks or popping into packed lunch boxes.
