
Very Easy Chocolate Chip Shortbread
Chocolate chip shortbread is incredibly easy to bake, just a few basic ingredients, no fancy equipment, and you’ll have delicious, buttery treats in no time!
Makes: 25 biscuits
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes
Equipment:
- Stand Mixer
- Kitchen Scales
- Measuring Spoons
- reusable parchment paper
- Baking Tray
- Wire Rack
Instructions:
- Pre heat your oven to 180 degrees celsius and line your baking tray
- In your stand mixer add the plain flour, butter, ground almonds, icing sugar and vanilla extract. Mix until combined BUT do not over mix
- Stir in your choc chips
- Flour your surface then roll the dough to around 3mm thick
- Using a cookie cutter of your choice cut out your shortbread and place on the pre lined baking tray
- Bake for around 15 minutes, or until the edges start to brown. Bake time depends on the size and thickness of your shortbread.
Tips / Notes
If you’re not a chocolate lover, feel free to leave it out! I also love using small cookie cutters, they’re perfect for snacks or popping into packed lunch boxes.
